Excellent, Excellent !!!

Perfect for browning, braising and stewing large batches of chicken, pork, lamb or the like. This is a very heavy pot - so that's what makes it great for browning meat (maillard reaction) them simmering it in wine, broth and mire poix (carrots, celery and onion) plus lots of garlic.

This is now my standard "braising and stewing" pot and has replaced my 7.25 quart Le Creuset French Oven. It can take more abuse and is easier to clean. It is much wider and will brown more meat faster.

Granted that with the 13.5 in. cover, this rondeau will put you back about $180, this will pay for itself in only 2 outings with the family is a typical restaurant.

This is my best pot for cooking a large meal for my 3 hungry boys and their friends. I love it.

Great for when you really need it

I purchased this giant casserole as a Christmas gift for my husband, in effort to expand his collection of professional cookware. Yes, I am biased, but my husband is extremely talented and more folks that just myself think he could easily start a second career as a gourmet chef. That said, let me say this pan does not get used a whole lot, but when he needs a large pan for specific uses - searing a 2-1/2 lb. tenderloin or making mass quantities of spaghetti sauce for canning - it comes in EXTREMELY handy!

Most residential stoves do not have a burner large enough to accomodate the bottom of this pan, us included. However, with the copper core inside the bottom of the pan, our too-small burner isn't a problem, because the heat distributes throughout the copper core evenly, negating hot spots.

The lid is sold separately from the pot, but if you plan to let anything simmer (and the pan being a casserole, you should), you'll want to buy it - unless you really are a professional chef, no lid you have will be big enough.

The welded handles make for easy cleanup, although you may be limited for ease by the size and depth of your sink. Also, as a tip, take note of the pan diameter and make sure you have a special spot to store it - we had to give up a large cabinet where I previously stored all of our corningware, because that was the only spot wide and deep enough.

In sum, and I can't speak for professional chefs, this isn't a "must-have" pan (splurge on a 3-qt. Falk copper saucier if you want one of those), but it is extremely handy to have when you need an extra-large high-quality pan.

A Must Have !!!

Just a super pan !!!!! Spreads heat so nicely even with a small burner.
Now I can make my chicken curry in one pan !!!!!!!!!
